mothers day cheesy prosciutto brunch melts

ingredients

  • 1 cup of Dietz & Watson Cheddar Cheese (grated)
  • 4 slices of Dietz & Watson Prosciutto
  • 2 tbsp of olive oil
  • 2 cups of kale
  • 1 english muffins (sliced in half)
  • 4 eggs

directions

  1. In a pan over medium heat, heat 2 tbsp of olive oil and add minced garlic.
  2. Cook for 1 minute, and then add chopped kale.
  3. Season with salt and pepper to taste, and cook the kale until tender and wilted.
  4. Add the cooked kale to a mixing bowl along with grated D&W Cheddar Cheese. Stir to combine.
  5. Spread the mixture onto each of the lightly toasted English muffin halves, and broil on low for 3-4 minutes, until golden.
  6. While that’s happening, add a little oil to a skillet over medium heat and cook the eggs sunny side up. Top each half with 2 slices of D&W Prosciutto.
  7. Serve with a side of fresh OJ and sliced strawberries (or Moms favorite fruit!)
